Ingredients
Makes 6 servings
Tzatziki Sauce
1 cucumber
2 cups full-fat Greek yogurt
2 tablespoons olive oil
1 small garlic clove
2 tablespoons dill
1 lemon (2tbsp lemon juice)
kosher salt as needed
Pita Bread
160ml whole milk
80ml water
4g granulated sugar
30g olive oil
9g yeast
320g bread flour
4g kosher salt
4g thyme
thyme for garnish
salt as needed
pepper as needed
Procedure
Pita Bread
Mix the sugar, yeast, olive oil, water and milk, wait for 5 min and see if yeast is alive.
Prepare flour, salt and chopped fresh thyme in another bowl.
Pour in yeast mixture in batches, mixing completely before the next.
Once shaggy, knead on a well-floured surface until the window pane test is passed.
Oil a bowl, cover, and proof for about 40 minutes, until it rises and doubles in size.
Preheat and oil a pan on medium heat.
Press on the dough to remove the air and divide into 6 pieces.
Use a rolling pin to roll out each piece of dough to a circle 20 cm in diameter.
Cook for until they puff up slightly, and there is nice browning on each side.
Garnish with more thyme.
For tzatziki sauce, grate cucumbers, squeeze lemon, chop dill, and extract garlic and combine all ingredients.
