Ingredients
Makes 2 servings
2 scallions
2 cups white rice
2 eggs
2 tbsp sesame oil
soy sauce as needed
kosher salt and cracked pepper as needed
1 steak, 1 chicken breast, ยฝ lb shrimp, or 1 pork chop
Scallion Oil
4 cups vegetable oil
2 anise stars
5 bay leaves
5 stems cilantro
8 scallions
2 shallots
1 white onion
1 ginger root
4 tbsp soy sauce
Procedure
Cook the rice with your method of choice, I just add it to boiling water (1 part rice 2 parts water).
Dry brine your preferred meat with kosher salt and cracked pepper for at least 15 min.
Scallion Oil
Preheat a wok or pan over high heat, get it hot, and add all vegetable oil.
Reduce to medium, then add the anise, bay leaves, scallions, shallot, onion, ginger, and cilantro.
Continue to cook until scallions turn yellow, about 20 min.
Reduce to low and cook until brown.
Turn off the heat and allow the oil to infuse for 5 minutes.
Strain the vegetables from the oil and set oil aside.
Fried Rice
Chop the remaining 2 green onions.
Whisk eggs together with salt and pepper.
Preheat and oil a cast iron pan. Make sure its hot and oiled enough or the eggs will stick.
Scramble the eggs until slightly runny, then remove and set aside.
Give the pan a quick wipe and then cook your meat of choice in the pan; make sure the pan is oiled with more scallion oil.
Once meat is cooked, add a bit of water to deglaze the fond, and add the rice along with 1-3 tbsp of scallion oil.
Add sesame oil and soy sauce to taste, and mix well.
While rice is heating up, chop your meat into cubes or strips.
Once heated and homogenized, reduce heat and add eggs, meat, and scallions; mix well.
