Ingredients
Makes 4-6 servings
2 bags yellow corn tortilla chips
1lb ground beef or carne asada
1 can refried beans
1 block colby jack cheese
1 block pepper jack cheese
1 head romaine lettuce
2 roma tomatoes
1/2 white onion
2 jalapenos
2 green chilis
1 8oz can chipotles in adobo
4 tajin toastada disks
1 tsp garlic salt
1 tsp ground cumin
1 tsp paprika
1 tsp chili powder
ยฝ tsp cayenne pepper
ยผ tsp white sugar

Procedure
Preheat oven to 300F.
Grate both blocks of cheese separately.
Mince onion, chilis, jalapenos, and chipotles.
Mix garlic salt, cumin, paprika, chili powder, cayenne pepper, and sugar together.
Cook ground beef with 2/3 of the onions until no more red can be seen.
Finish beef for 1 min with half of the seasoning mix.
Layer nachos in a large cassarole pan in this order, left with colby and right with pepper jack:
Layer 1: chips, beans, beef, cheese
Layer 2: chips, light beans, beef, cheese
Layer 3: chips, beef, heavy cheese, jalapenos, chilis, light adobo, chipotles, crushed tajin toastadas
Bake for 20-30 min until all cheese is melted including in the middle.
Top with lettuce, onions, and tomatoes.
Drizzle with hot sauce of choice.
Serve with fresh salsa and sour cream on the side.
