Makes 1 serving

Ingredients

4 eggs
1/2 cup sharp cheddar
1/4 white onion
1/4 lb diced uncured ham
1 chili
1 serrano pepper
1/2 tsp cumin
1/2 tsp paprika
salt and pepper as needed


Procedure

Mince onion, chili, and serano pepper and grate cheese.

Crack eggs into a bowl and mix very well.

Cook ham with onion in a cast iron pan on medium-high until ham is slightly crispy and onions are mildly carmelized.

Add serrano, chili, cumin, and paprika and finish for about 2 min.

Add water as needed to lightly deglaze (about 3tbsp).

Turn heat to medium and add eggs.

Stir constantly making sure to scrape bottom and sides.

Once curd begins to form, turn to medium low and continue to stir.

Once eggs are fluffy, plate and garnish with cheese, pepper, and salt.
